Grilled Chicken With Vegetables
Ingredients
For Marinate
- 1/4 cup Olive Oil
- 1/4 cup Fresh Lemon Juice
- 4 Garlic Cloves (crushed)
- 1 tsp Smoked Paprika
- 1/2 tsp Chilli Flakes
- 1 tsp Dried Oregano
- Salt (to taste)
- Black Pepper (to taste)
For Grilling
- Chicken Breast (skin less & deboned)
- Bell Pepper Seeds (removed & slicedinto thick strips)
- Broccoli
- Asparagus Woody (ends trimmed)
- Zucchini/Courgette (thick slice)
- Carrot (small pieces)
- Cucumber (small pieces)
- Tomato (small pieces)
Instructions
- Pre heated the grill/griddle pan.
- Season the chicken with salt and allow to sit while you makethe marinade.
- Combine the marinate ingredients and mix well.
- Pour Half of the marinade over the chicken and the other halfover the vegetables. Allow to marinade for a minutes.
- Grill the chicken for 5-7 mints per side ( depending onthickness) until cooked to your preference.
- Now remove from the grill, cover with foil and allow to restwhile you grill vegetables.
- Grill the vegetables until they are starting to char and arecooked to your preference.
- Remove from the grill and serve with the chicken and lemonwedges for squeezing.
