Ingredients
  

For Marinate
  • 1/4 cup Olive Oil
  • 1/4 cup Fresh Lemon Juice
  • 4 Garlic Cloves (crushed)
  • 1 tsp Smoked Paprika
  • 1/2 tsp Chilli Flakes
  • 1 tsp Dried Oregano
  • Salt (to taste)
  • Black Pepper (to taste)
For Grilling
  • Chicken Breast (skin less & deboned)
  • Bell Pepper Seeds (removed & slicedinto thick strips)
  • Broccoli
  • Asparagus Woody (ends trimmed)
  • Zucchini/Courgette (thick slice)
  • Carrot (small pieces)
  • Cucumber (small pieces)
  • Tomato (small pieces)

Method
 

  1. Pre heated the grill/griddle pan.
  2. Season the chicken with salt and allow to sit while you makethe marinade.
  3. Combine the marinate ingredients and mix well.
  4. Pour Half of the marinade over the chicken and the other halfover the vegetables. Allow to marinade for a minutes.
  5. Grill the chicken for 5-7 mints per side ( depending onthickness) until cooked to your preference.
  6. Now remove from the grill, cover with foil and allow to restwhile you grill vegetables.
  7. Grill the vegetables until they are starting to char and arecooked to your preference.
  8. Remove from the grill and serve with the chicken and lemonwedges for squeezing.

Notes

  • Vegetable amounts are just for guidance, use as much as you want to make it juicier and tending.
  • Also skip this portion, which means to quite vegetables as well according to your preference.
