Prepare Vegan Biscuits
- Prepare first vegan short bread biscuits; mix both flours, vanilla extract, and baking powder together. Add some apple sauce and the coconut oil, keep stir by gentle hand until a ball of dough is formed that holds together the mixture.
- Now gently spread the dough about 2cm high and use a biscuit cutter or any cutter to form round biscuits according to your ideal size (I cut biscuits about 5-6 cm diameter). Lets finish first by making all biscuits until there is no dough left.
- Bake biscuits in oven for 10 minutes or any large pan on stove (all up to you) for about 25 minutes.
Prepare Coconut Cream
- It's time for preparing coconut cream. Used blender or beater to blend coconut cream, coconut milk, silky tofu, remaining sugar and blend them perfectly.
- Now app grated coconut in it and stirby using spoon.
- Place coconut cream in refrigeratorfor about 1 hour.
Tiramisu Assembling
- Clean, peeled off skin and cut mangoes into cubes first. Now take another mango clean, peeled off skin andblend in a blender to make its puree.
- Assemble Tiramisu by lining the bottom of the glass with mango puree, add a layer of coconut cream, crumble some biscuits on top, then mango cubes layers, now add some coconut cream again. Repeat this 5 step process until glass get filled with tiramisu.
- Keep continue this process and make 8glasses of tiramisu by adding layers of mango puree, coconut cream, biscuit,mango cubes and generous topping of coconut cream again.
- Now garnish glass with some pieces ofstrawberries and vegan biscuit on top.
- Chill in the fridge for at least 1hour before serve.
Notes
- Be gentle and not mix coconut cream over as its gets thicker.
- If want to make non-vegan cream or biscuits, simply use egg in the biscuits preparation process.
