Chicken Tikka Biryani
Ingredients
For Boiling Rice
- 1/2 kg Rice (Sehla or Basmati) parboiled
- Salt to taste
- 1 Bay Leaves
- 2 Star Spice (Badyan Khatal)
- 1 Cinnamon stick
- 2 Large Cardamon
- 5 Cloves
- 1 Nutmeg
- 1 tsp Jaiwatri
- 2 tsp Lemon Juice
For Barbeque Tikka Marination
- 750 gm Chicken (boneless)
- 1-1/2 tbsp Garlic Paste
- 1 tbsp Ginger Paste
- 4 tsp Lemon Juice
- 1 tsp Red Chili Powder
- KachriPowder (amount depend on quality of meat)
- 1 tsp Black Pepper
- 1/4 tsp Jaiwatri
- 1 Nutmeg
- 4 Cloves
- 1 tsp Cinnamon Powder
- 1 tsp Cardamon Powder
- 1 tsp Cumin (whole roasted)
- 1 tsp Coriander (whole roasted)
- Red Chillies (large and dried)
- Olive Oil as required
For Gravy
- 3 Onion (finelychopped)
- 3 Tomatoes (slices)
- 1/2 kg Yogurt
- 1 tsp Garlic Minced
- 1 tsp Ginger Minced
- 1 tsp Chili Flakes(crushed)
- 1 tsp Turmeric Powder
- 1 tsp Red Chili Powder
- 1 tsp Cumin Powder
- 1 tsp Coriander Powder
- 3 Green Chillies(crushed)
For Garnishing
- 1/4 cup Lemon Juice
- 1/4 cup Cilantro (Hara Dhaniya)
- 1/2 bunch Mint Leaves (chopped)
- 2 Lemon Sliced (finely cut)
- 6 Dried Plums
Instructions
For Barbeque Chicken Marinate
- Grind whole spices as mention above for making tikka masala.
- Now wash the chicken thoroughly and clean it. Now start marinating whole chicken with spices.
- Now after giving a good mix set aside for at least 2 to 3 hours or overnight with ground spices along with other ingredients mentioned for tikka.
- Heat 1 tablespoon of olive oil in a pan and add marinated meat into it after 3 hours of marination.
- Now cover it with lid and cook over slow heat till tender and dry. Take it out in a plate or bowl and set aside for a while.
For Gravy
- Fry onion in oil, add tomatoes and blend them with yogurt into a smooth paste.
- Now heat one tbsp of oil in a pan, fry ginger and garlic paste in it and add the blended gravy.
- Cook till it is about to dry, now the remaining spices for gravy above mention thoroughly add now.
- Soak the rice in water at least for two hours.
- Cook till the mixture come out accurately perfect foam, as oil come out upper surface.
Boiling Rice and Assembling
- In a large pan, boil water with all the ingredients above mention in rice making section except lemon slices.
- When water comes to boil add the soaked rice into water.
- When rice are about to tender, add lemon juice now.
- Strain the rice.
- In the same pan, drizzles some olive oil, make a layer of rice and then pour some gravy over it.
- Now add some cooked tikkas.
- Sprinkle a little lemon juice.
- Repeat the above mentioned layers.
- Garnished with all the ingredients mentioned in for garnished section.
- Now take a little piece of coal and burn it under heat of stove.
- Wrap it with aluminium foil and leave the top open.
- Place this on top of garnished biryani and pour few drops of olive oil on it and immediately cover the pan.
- Leave it over low heat flame for 5-7 minutes, smokes will start comes out soon.
- Now your tikka biryani is ready now.
